Sim's Homey Chicken Stew
serves 2
Ingredients:
1 free range chicken drumstick, in chunks
1 potato, peeled and diced into chunks
1 whole carrot, peeled and diced into chunks
4 small tomatoes
1/2 onion
3 cloves of garlic
1 teaspoon butter (alternatively, use olive oil for a heart-healthy meal)
Water 300 mL
Black pepper, parsley, and rosemary leaves, to taste
Methods:
Season chunks of drumsticks with ground black pepper, parsley, and rosemary for 30 minutes.
In a large wok, heat butter until completely melted, saute onions and garlic until brown (or until the neighbor pokes his nose through to admire the smell).
Add drumstick and potato chunks while flipping regularly until chicken is tender.
In a large (steel or porcelain) pot, layer chicken at the bottom.
Followed by carrots, potatoes, and tomatoes. Drain sauce from wok into the pot. Add in 300 mL of water, cover, and cook at 140 for 3 hours.
Serve on a bowl, garnish with extra rosemary and parsley, and ta-da!
Serve with rice or eat as a standalone.
